The president of Cajamar, Eduardo Baamonde; the general director of the Food Industry of the Ministry of Agriculture, Fisheries and Food, José Miguel Herrero; and the president of the Interprofessional Dairy Organization (InLac), Ignacio Elola, presented the publication 'The dairy sector in Spain' at noon, from the headquarters of the Ministry of Agriculture in Madrid, together with the two coordinators of the work, Edelmiro López , professor of Applied Economics at the University of Santiago de Compostela; and Manuel Lainez, consultant specializing in agri-food innovation. The book, edited in collaboration with InLac, analyzes in depth the evolution experienced by the sector as a whole since 2016, when the milk quota system disappeared and a progressive liberalization of production began, currently finding the Spanish supply of milk and its derivatives in a favorable situation of rising prices.
