Starking, the most popular variety grown in the country, makes up 37% of the domestic apple production. The Starking possesses a tangy-sweet and crisp flavor alongside, juicy flesh, and a dark red color. When stored in cool conditions of 0°C and 90% relative humidity, the apple can hold a storage life of up to 7 months. The harvest season for Starkings begins in September and ends in November.

The Golden Delicious is the second most-produced apple variety in the country holding 25% of total apple production in Turkey. The harvest starts around mid-October and ends in November. Golden Delicious is known for its intensely rich flavor and crispness. It's particularly identifiable for its larger-than-average size and extra white flesh. Cold storage conditions of 0°C at 90% humidity provide these apples a 5 month shelf life.
