At present, the availability of hake sausage is notably scarce, particularly due to limited production across the three primary markets. Namibia and South Africa are generating minimal quantities of fillets, consequently leading to a dearth in hake sausage production. Similarly, Argentina, another significant supplier market, is experiencing reduced hake catches, predominantly comprising large-sized hake that are being sold as HGT (headed, gutted, and tailed) instead of fillets, resulting in residual byproduct production.
Conversely, the demand for hake sausage remains substantial in the Portuguese and Spanish markets. Processors in these regions are eager to procure this product and are willing to offer competitive prices.
