Shrimp, crayfish, blue lobsters, king crabs, stone crabs, and water that has been biologically filtered and cooled are kept alive in aquariums. Some species of fish, like organic Scottish salmon, tuna, and organically farmed sea bass, are kept in preserved conditions so that they can be sold whole or filleted, depending on what the customer wants.
