-Established in 1927, The Robles Family has been dedicated to making wine in Montilla.At the end of the nineties, the third generation took over at the winery and understood the need to incorporate organic viticulture and work with native yeasts into the winery's tradition. At first glance, the Bodegas Robles vineyards have the air of a wild and romantic garden, invaded by a layer of clover, poppies, clover and wild flowers, the buzzing of bees and other insects. However, there is nothing accidental in the vineyard: it is the result of years of research in which the wine cellar in Córdoba maintains a permanent dialogue with the University and various national and international research centers. -The winery own 4 vineyards: “la Toledana”, “el Canillo”, “Cabriñana” and “Cañada del Navarro”, located in the Sierra de Montilla and one of the best production areas. -Organic vinegars crafted from the acetic fermentation of wines. Aged for years in American oak barrels following the traditional “solera and criaderas” system that mixes very old vinegars with younger ones thus mothering the young vinegars.
