CLAI (Agricultural Workers' Cooperative Imolesi)

A group of farmers and ranchers gathered in 1962 with the intention of producing a superior salami. They were aware that treating animals humanely and processing the meat with tender care would result in meat with a more natural flavor. And that in order to spread the word to everyone, they had to collaborate. Three generations later, the men and women of CLAI continue to feed a 100% Italian meat supply chain with passion and vision, continually refining their procedures while paying attention to animal welfare and the environment. Their goal is to bring the finest in craftsmanship, quality, and flavor to your table. The true CLAI tradition is to repeat it the way it ought to be done.
