A group of farmers and ranchers gathered in 1962 with the intention of producing a superior salami. They were aware that treating animals humanely and processing the meat with tender care would result in meat with a more natural flavor. And that in order to spread the word to everyone, they had to collaborate. Three generations later, the men and women of CLAI continue to feed a 100% Italian meat supply chain with passion and vision, continually refining their procedures while paying attention to animal welfare and the environment.
