- Established in 1990, situated in Alta Val di Cecina near the Etruscan town of Volterra, specialized in the production of high-quality organic cheese, extra virgin olive oil and wine. - The fully organic farm extends over 200 ha of land, following complete biological processing cycles for every product. - The farm produces a full-flavored raw milk pecorino with a hint of aromatic herbs which is one of the most renowned cheeses. - Produces extra virgin olive oil made from organically grown and hand-picked frantoio, moraiolo and leccino types of olive using the cold press method. - The extra virgin olive oil is fluent, with an intense smell and a slightly spicy, medium intensity fruity taste.
