David and Christine Long founded Hilltop Ranch, Inc. in 1980. Hilltop Ranch is now one of the largest privately held almond processors, handling approximately 30,000 tons annually and shipping it to buyers in more than 70 nations. Customers can rest assured that Hilltop Ranch satisfies international food safety standards thanks to its certification by the British Retail Consortium. The hulling, shelling, cleaning, grading, sorting, sizing, processing and in-house logistics of Hilltop's almond handling operations are integrated. In 2002, the processing plant was built, and in 2006, it was expanded. 2008 saw the addition of a Sortex Z+ and Best X-ray processing line. The sizing plant implemented Satake Evolution sorting technology in 2013, which was followed by a new vacuum steam pasteurization process.

Whole natural kernels, both organic and conventional, are available in the shell, as are manufactured almonds (sliced, slivered, split, diced, and so on).
