Traditional PDO Balsamic Vinegar of Modena is crafted through a meticulous, centuries-old process. Fresh grape must from local varieties, like Trebbiano or Lambrusco, is gently cooked to concentrate its flavors. The must then undergoes natural fermentation and slow acetification before aging in wooden barrels arranged in a "batteria." Each barrel, made of woods like oak, cherry, or juniper, imparts unique characteristics to the vinegar. Over a minimum of 12 years, the vinegar is transferred to progressively smaller barrels, developing its signature rich flavor, thick texture, and deep color.
After aging, it is evaluated for PDO standards and bottled in the iconic bulb-shaped bottle, ensuring exceptional quality and authenticity.
