Fermented and dried seeds of the cocoa tree (Theobroma Cacao). The cocoa beans is merchantable and of good quality, thoroughly dried, free from smoky beans, free from abnormal or foreign odors and free from any evidence of adulteration. They are: • Reasonably uniform in size, • Reasonably free from broken beans, fragments, and pieces of shell, • Virtually free from foreign matters such as stone, tramp metal or other matters likely to • cause damage to the cocoa beans, • In compliance in all respect with the regulations laid down in the international cocoa standard. FLAVOR AND AROMA Free from undesirable odours and off –flavours (viz, mouldy, smoky, acidic, objectionably astringent).
