Shea butter is gaining popularity as an alternative for cocoa butter. Unrefined shea comes from shea nuts whereas the cocoa butter comes from the cocoa bean. Demand for shea is also rising as it is used in a variety of industries including the cosmetics industry and food processing industry. Refined shea is used more commonly used as cooking fat or margarine in the confectionary sector.
