[Because “pheasant” and “pheasant meat” is “exempt” from the regulations that govern interstate commerce, i.e. exempt from federal poultry inspection, we can bring in any State voluntary or Federal voluntary inspected product.]
WHOLE BIRDS
Basically, we would be acquiring the whole birds (eviscerated (“no guts”), neck skin on – (just a technical spec) the actual neck is removed from the back of the bird’s neck area. This allows for a “skin flap” to cover the “opening” when netting the birds for smoking. This helps keep the juices from draining out of the bird while cooking.)
Giblets (heart, gizzard, and liver) & Neck may or may not be required inside the birds.
Inside the birds for non-smoked, and none included for birds to be smoked.
Bird Size: minimum 1.85 lbs each, maximum 3.5 lbs each
Quantities required annually:
2500 for smoking – no gibs & necks;
5000 for oven ready whole (not smoked) – gibs & neck pack
