The Lecithin is a mixture of 3 types of phospholipids, phosphatidylcholine, phosphatidylethanolamine, and phosphotidylinositol. It has emulsifying properties. Lecithin has a wide application like emulsifier, stabilizer, softener, wetting agent, Dispersing agent, Blending Aid, shelf life extender, health supplement in food and confectionary industries.
