Mustard plants are plants belonging to the family Brassicaceae, characteristics range from deeply lobed and frilled leaves to smooth broad leaves. Some have yellow flowers, and others have white. Mustard is a cool-season and biennial vegetable that prefers temperatures below 26°C that is why can grow very properly in the prairie provinces. Canada solely produces 85% of the mustard seed worldwide, and has a "long and glorious history of mustard production, process, export and research, and nearly 80% of that is grown in the province of Saskatchewan. Canadian mustard is used as an environmentally friendly pesticide and a natural fertilizer. In Canada, three mustard types are produced:
Yellow: mildest with lowest oil content.
Brown: used for Dijon-style mustards.
Oriental: used as a condiment and spicy cooking oil
