Hard Persimmon

Texture and flavor : Sweet and distinctive flavor. The flesh is firm and crispy, softening over time. Composed basically of mucilage and pectin.
Soft Persimmon
Shape : Spherical, slightly flattened, thin shell.
Color : Reddish, depending on its carotene content. The pulp is also orange-red.
Texture and taste : Very sweet taste. The pulp is soft and should not have astringency (free from tannins), has a gelatinous and cold appearance, composed basically of mucilage and pectin. The texture is sweaty and sometimes fibrous.
