The browning reaction is accelerated during the manufacturing process, resulting in a dark brown color. When fresh ginseng is cooked and dried, ginsenosides Rg2, Rg3, Rh1, Rh2, etc. are produced, and these components are known to improve learning ability, anti-thrombotic activity, antioxidant activity, memory, immunity, and fatigue.
