Extra virgin olive oil has a shelf life of approximately 24 months after it has been processed and bottled, but the shelf life can be prolonged if transported and stored in a refrigerated environment. Cooling the olive oil solidifies the oil and the solidified oil can be used as a spread or melted back onto the frying pan to use for cooking.
