Checking the Freshness of Frozen Tuna Without Cutting Was Developed by Fujitsu and Tokai University in 2022

On December 21, 2022, Fujitsu announced that it has succeeded in judging the freshness of frozen tuna using ultrasonic waves and artificial intelligence (AI) in joint research with Tokai University. The body near the tail was cut, and an experienced inspector would visually check it, but anyone can inspect it without cutting the body. This aims for practical application in two to three years. By analyzing the ultrasonic waveform unique to tuna with poor freshness and having this technology, they obtained the ability to make correct judgments on the freshness of Tuna with an accuracy of about 80%. It will be possible to check the freshness of areas other than the area around the tail, which was difficult to determine with conventional methods. It is considered this technology will be implemented in the future for other frozen foods such as meat, and applications in the medical and biofields.
