Decreasing demand for Australian western rock lobster in Japan

The Australian rock lobster has experienced some limitations when exporting to Japan these last few years. Two main factors have been:
1) The reduce quota limit
2) Increasing prices

This has generated a decline in the number of western rock lobsters entering Japan. The amount that they have been substituting with American lobster, mainly from Canada.

But there is only one part of the rock lobster body the Japanese have increasingly purchased from Australia this last years: the head. Used mainly in Japanese soups and for food decoration purposes.
