Shortage of sesame seeds affects Tahini production in Brazil

Due to severe drought during the Soybean harvest season, from October to November, the supply of sesame seeds, the next in line for harvesting, is experiencing a delay. Sesame seeds are expected to be available by mid-June. This is affecting the production of Tahini sauce as it specifically uses Trebol and Anahi, sesame seed varieties. Other remaining varieties sold at the end of the harvest are not suitable and are usually randomly mixed for oil production where taste or other organoleptic patterns are not a big concern.
