Suppliers have adapted a new process in dealing with pili nuts

Pili nuts are quite hard to process due to its tough shells. Because of this, mechanical de-shelling machines often crush the nut kernel in the process, resulting in high levels of waste. Thus, suppliers, particularly in the Bicol region, have adapted a new process in dealing with pili nuts. They rely heavily on hand-processing and traditional Filipino techniques from harvesting to production, combined with unique natural processes, including a proprietary "Slow Dry" method, wherein nuts are soaked in brine and letting them dry under the heat of the sun. Such processes, when applied correctly, would produce excellent quality nuts that can compete both domestically and internationally.
