Sweet potato season and the curing process in Egypt

Sweet Potato season is starting in Egypt, farmers have begun to harvest the early production in order to start the curing process to get them ready for export.
The curing process is a process done by storing the sweet potatoes in a relatively high temperature and humidity for 10-14 days, this process is done to heal any damage that occurred to the tubers during harvest so they store longer in storage, it also kicks off the sugar production process to give you sweeter tubers.
Mostly small sizes are available at this stage of early harvest, and bigger sizes are expected to be available by the 3rd week of July.
