Since 2015, in Italy 6 April is marked Carbonara day. A tribute to one of the most popular and worldwide loved Italian dishes, pasta alla Carbonara. Among the main ingredients, the eggs are of crucial importance. The annual production of eggs in Italy amounts to 12.6 billions of eggs, approx. 775k/mt, with a self-sufficiency rate close to 100%. It is highly unlikely for Italians to import eggs from abroad as almost 80% of eggs found in the Italian market are free-range and organic. The value of the sector is also important, it reached USD 1.51 billion in 2021.
