Description
Ojai Alimentos S.A. de C.V. has its own storage freezers with controlled temperature. The temperature is maintained between -18 degrees Celsius to -20 degrees Celsius. One piece of pork is packed in IWP and the meat is placed facing downwards to avoid any incrusts. The poly sheet is tightened up. The products are ready in 7-10 days from payment confirmation and 3-4 days from all subsequent orders. The main port used for overseas export is the port of Ensenada which is about 1200km away from the plant.

The company follows the Program of Inspection for the meat-based on the NOM030. The specifications and procedures for the verification of meat, carcasses, entrails and offal from importation at checkpoints for animal health, ESR (Socially-Responsible Company) and in Compliance checks with the Wal-Mart system of safety (Annual). The company holds the Certifications to export to Japan, Vietnam, Hong Kong, South Korea and the certification is in process for China and New Zealand. They also have a Certification for Marinated and Injected products. They have a number of safety systems starting with POES, Quality of Water, Traceability and Labeling, Control of Harmful fauna, Good Manufacturing Practices, Microbiology of products, Waste management and control, Control of Toxic waste, Operator health and hygiene, Pathogen reduction program, Animal welfare and Mexico Supreme Quality System. The average annual production of pork carcass is 1440 metric tonnes and the production process takes place all around the year. The production process is verticalized which helps in easing the traceability. The company owns a feed production facility, genetic centre for the health and appropriate nutrition of the hogs. 100% of the hogs are bred by Ojai Alimentos S.A. de C.V, slaughtered and processed within the premises of the company. The whole processing involves around 600 people.

Description
Ojai Alimentos S.A. de C.V. offers frozen pork ham. The product is deboned, defatted, with only a 5mm superficial fat layer. It is completely nerve-free, bone-free and cartilage-free. It does not have any traces of blood clot and foreign material. It is free from PSE and Ecchymosis.
It does not require any overcutting on the fat side and with the shank muscle. It has a shelf life of 730 days from the date of production. Samples are available on request.
