Description
Luna Export Slaughterhouse PLC sources only free-range goats or to be more precise they only slaughter those goats that have grazed in open pastures and are treated humanely at firm according to the international standards. They have the capacity to vacuum pack the meat to ensure that what they export that maintains its optimal freshness, on the shelf for up to 70 days. Their huge state-of-the-art facility is capable of processing 25MT goat meat yearly. These products are available all season. The stages of production of goat meat are as follows:
1. Lairage: Prior to slaughter, animals are held in their well-designed lairage pens. 2. Skinning: After bleeding, the free-hanging leg is skinned; this leg is then used temporarily for hanging so that the slaughter chain can be taken away from the other leg and continues to the second leg and so on. 3. Evisceration and Offal Processing: The next stage removing the guts and all other internal organs from the carcass. 4. Washing: The effective carcass washing is a multi-step process which ensures the carcass surface is clean before it can be sanitized. 5. Trimming: The trimming will remove the physical contamination as well as the microbiological contamination of the tissue, assuring that the product is safe and wholesome. 6. Spraying: Organic acid sprays are used as a method for decontaminating meat and meat products and ensuring the delivery of safe meat for their consumers. 7. Chilling: They place the carcasses inside cold storage under controlled temperature and humidity for the chilling process. 8. Packing and Loading: After the carcass has passed over the required chilling process; chilled carcasses shall be packed using sterilized stockinet and then it will be loaded on to a refrigerated truck.
The processing plant is well renovated with industry-standard conveyor lines, centrally controlled PLC refrigeration system, processing areas for standardized vacuum packing, and proper dock seal upon loading.
