Description
The quality control is done in accordance with the HACCP standards. There is an inspection once the octopus is landed by a biologist, and after processing, there is a second inspection before freezing.

The products are all traceable, and are able to be tracked to its origin, starting from the boat. The process is certified all the way to the plant, a federal agency under the name of COFEPRIS certified whether a plant meets with the HACCP guidelines thus allowing it to be exported.

Description
The company only works with fishermen and boats that are certified with Good Handling Practices on Board and HACCP. And all catching and processing shall follow these international standards. The catching season is between 1st of August and the last day of December. The octopus is caught, then eviscerated on board, and cooled on board. After landing, the octopus goes through cleaning, selection and freezing. Freezing shall be done for 24 hours before it is ready for sale. The octopus can be frozen in blocks or individually by IQF.

Description
Pedro Perlestain offers frozen and eviscerated octopus of Maya and Vulgaris species, that were wildly caught in the Gulf of Mexico, and Yucatan Peninsula. The Maya species is a local species, very appreciated worldwide and it is caught close to shore. The Vulgaris species is caught in oceanic waters. The sizes available are from T-1 to T-4 (from 400g to 1.8kg and above). They are packed in boxes of 10, 15, or 20 kg either frozen in blocks or individually in IQF. The company also offers shrimp, tilapia, red snapper, and jackfish.
