Ukrainian wheat flour is processed by first drying the wheat in silos, then placing the grain in a milling machine that produces distinct grains based on purity, content, and gluten content. High grade, first grade, and second-grade products differ mostly in protein and gluten content.

- Dry wheat in Silos -> Place the grain in the milling machine -> Produce different grains based on purity, content, gluten content

- Suppliers and buyers are interested in a long-term contract but that still depends on the price.

- Producers can produce high grade, first grade, and second-grade difference mainly in protein and gluten content

- White bread: use high grade or first grade

- Grain bread: use second grade

No hard variety of wheat, only soft wheat available in Ukraine
