Some common varieties of potatoes are Lady Rosetta, Nicola, Spunta, Diamond and Mondial.
Potatoes are divided into 2 main production categories: Industrial and Table Potatoes. Industrial Potatoes like the Hermes and Lady Rosetta have higher dry matter and contain lower percentages of sugar. Table potatoes like the Nicola, Spunta, Diamont, Bernadett, Mondial, and Draga are lower in dry matter and higher in the percentage of sugar. In terms of processing, potatoes are usually sold fresh or chilled unless when there's a need to be preserved for a different product form.
  • Lady Rosetta: These potatoes are rounded, small, and firm to the touch. The outer skin is red while the inner is light. The dry matter composition is about 20-22% while sugar levels are at 1%.
  • Nicola: The Nicola is elongated and oval in shape, with the outer and inner flesh usually a yellow color. The nutritional composition of the Nicola variety is dry matter (19-20%), starch (7.5%), protein (3-4%), and sugar (3.5-4%).
  • Spunta: The Spunta is large and elongated, somewhat curved, and pointed at the top. The outer color of the potato is yellow while the inner flesh is light yellow. The nutritional composition of the Spunta variety is dry matter (18-20%), starch (7-7.5%), protein (3-4%), and sugar (3.5-4%).
  • Diamond: The diamond variety is elongated and oval, medium to large in size, with an outer yellow color and inner light yellow hue. The nutritional composition of the Diamond variety is dry matter (18-20%), starch (7-7.5%), protein (3-4%), and sugar (3.5-4%).
  • Mondial: The Mondial is rounded to oval in shape, soft to the touch, and short/stout. The outer color is yellow and the inner flesh is white. The nutritional composition of the Mondial variety is dry matter (18-20%), starch (7-7.5%), protein (3-4%), and sugar (3.5-4.5%).
