The specialists developed an edible product that allows native fruits and vegetables to be preserved for longer from a gum obtained from tara seeds. Peru produces important crops such as coffee, cocoa, rice or native fruit trees. However, during postharvest there are several problems as crops perish quickly due to their early maturation. To this must be added the long distances to the markets with the highest consumption on the coast where the products must arrive in optimal conditions. Alcides Román indicated that, to obtain the product, they extract a gum from the tara seeds to which they add thickening, uniformizing, plasticizing and antimicrobial substances.
