In the period January-November 2021, the value of fresh pepper exports totaled 1,366 million dollars, which implied an increase of 5.4 percent compared to the same period a year ago. In Mexico it is used as a spice or condiment, it has high nutritional value and low fat content, as well as a large amount of water, rich in vitamins, minerals, carbohydrates and fiber. Almost 50 percent of its production in the country is carried out under the modality of protected agriculture, which makes it possible to find it on the market practically at all times of the year.
