The National Service of Agri-Food Health and Quality (Senasa) formalized this Tuesday the modification of the Regulation of Inspection of Products, By-products and Derivatives of Animal Origin, approved by Decree 4238/68, with the objective of updating the definition of collagen and gelatin in accordance with international standards. The decision, published through Resolution 859/2025, redefines collagen as "the concentrated and dry by-product obtained from cartilages, tendons, bones, pieces of leather, fascias, aponeuroses, and fishery products." Furthermore, the text establishes that the product will be called "collagen" when the raw material has not been subjected to hydrolysis processes, and "gelatin" when it has been subjected to such processes, whether or not its gelling properties are retained.
