General Information

Spinach has gained its popularity as one of the most consumed vegetables in the U.S. The vegetable was initially planted in Persia but was later introduced in Europe during the 15 century (Lounsbury & Weil, 2018). In the 19th century, this vegetable was introduced in the USA and it has become very popular among the Americans (Lounsbury & Weil, 2018). Besides, the US has become the second largest producers of spinach assuming 3 per cent of the market share (Lounsbury & Weil, 2018).


The spinach plant contains simple leaves that stem from the plant’s centre and they are approximated to be 2-30 cm in length and 1-15 cm in width (Lounsbury & Weil, 2018). The leaves do appear flat and grow in a rosette. Spinach produces yellow-green flowers that are small. They also produce small fruits that contain seeds.


The state of California is the highest producer of spinach in the U.S. it produces about 72% of all spinach produced in the country (Lounsbury & Weil, 2018). Spinach is the USA is being harvested with scissors that are used to cut the leaves from the stem. This method enables other leaves to grow and produces quality products.


Flat-leaf spinach is the most popular and common species of spinach grown in the USA. It is primarily used for domestic consumption (Lounsbury & Weil, 2018).


The reason is that it is cooked and eaten at home. Besides, it contains calcium, iron, and other essential minerals and vitamin required by humans (Lounsbury & Weil, 2018). It is also applied for medicinal purposes where it is used to prevent various infections.

There exist a difference between the modern variety and older variety of spinach. The reason is that the older varieties do produce seeds quickly during the warm conditions while the modern varieties do grow more rapidly as compared to the older varieties and they do take long run up to produce seeds (Jansen, 2018). Moreover, there are 3 primary varieties of spinach.


Savoy

This variety does have dark green, curly and crinkly leaves. It is a variety that is sold in fresh bunches in various retailers (Jansen, 2018). Besides, Bloomsdale is one heirloom variety of this type of spinach. This variety is also resistant to bolt.


Smooth/Flat Leaf Spinach

This variety has smooth broad leaves that are always easier to clean as compared to savoy. This variety is usually planted for frozen and canned spinach (Jansen, 2018). Besides, it is also used for processed foods, baby foods, and soups.


Semi-Savoy

This kind is a hybrid variety. This variety has crinkled leaves. Additionally, it does have the same texture as compared to savoy, but it is easy to clean (Jansen, 2018). This variety is grown for both processing and fresh market. This variety is widely produced in the world in that it is resistant to producing seeds.

The various types of processed spinach undergo various processing techniques. This processing can be carried out through drying and freezing to keep the leaves fresh and moist (Patterson, 2014). Besides, these techniques are meant to prevent any form of damage to the leaves.


The various types of processed spinach leaves include; green giant and spinach flake (Patterson, 2014). Spinach flake is being dried up while the green giant is always being frozen so as to keep the spinach leaves fresh.


The green giant is always being boiled and frozen to last long to prevent it from drying up.
