Cane of 200 g made with pasteurized goat's milk and wrapped in special paper. Awarded for four consecutive years with the first prize of the International Exhibition of the Club Gourmets de Madrid, three Cincho awards and best cheese in Spain according to the Ministry of Agriculture in 2011. It has a slightly acidic taste and lemony aroma, coated with selected and edible white mold that grows during the refining process.
Fresh goat cheese, made by the traditional procedure of coagulating milk, molding, pressing and salting in salted water.
For the peculiarity of being a cheese of such a short life, all the Phases of the process must be carried out with extreme hygiene (surface and environmental) and with almost instantaneous cooling.
