For this wine without added sulphites, we carry out a mechanical collection, the harvest bins are all inerted with nitrogen in the form of dry ice for transport in good conditions of the grapes. Once arrived at the cellar, the harvest is once again protected with dry ice, then enters the fermentation phase. Fermentation at low temperature, in stainless steel vats. At the end of fermentation a micro oxygen supply is carried out in order to soften the tannins.
