Parsnips taste the best if they are left in the ground for a few frosts, but they are harvested before the ground freezes completely. Seeds of parsnip will germinate only from fresh seeds harvested last summer and they are sensitive to the soil temperature that should be at least around 10-12 degree Celsius when they are sown, usually from April to June in Europe.
