Tapioca sweeteners are gaining momentum as an alternative to sugar and corn syrup. Sugar and corn syrup are both highly-processed, whereas tapioca has a more natural flavor and can be included in gluten-free diets. Tapioca syrup comes from cassava after the product is ground down into a starch. Cassava is produced across Africa, South America, and Asia.
