France produced only 11,674 MT of foie gras in 2021, a decline of more than 30% in 2 years. The industry is already forecasting a further drop in production in 2022. Indeed, the farms have already lost 2 million ducks. Following the extreme violence of the epizootic, which hit the South-West this winter 2021-2022 and is now spreading to the Pays de la Loire, the second largest production area, the foie gras industry is in an uncertain situation, not to mention the increase in production costs, which is intensifying due to the conflict in Ukraine. Future production capacity will mainly depend on controlling the spread of avian influenza in the breeding farms of the Pays de la Loire.
