The phenomenon that demand exceeds supply is not a new thing. For instance, salmon prices are hitting new highs, and octopus prices are still very high even after Christmas. The unique thing is products that nobody has used, or have a very particular low demand, are now also in shortage.
According to one of the Portuguese buyers who has been in the local market for 40 years, the products that were cheap and easy to obtain two years ago are now almost impossible to get, such as Atlantic cod belly and some salmon bits and pieces.
