Sarrion, a small town in Spain with 1500 inhabitants has established itself as the world's capital of black truffle. There are no plots of land available for sale, and many old producers are using their plots to cultivate black oak trees, a necessary element for the cultivation of truffle.
Nowadays, almost 100% of truffle comes from plantations as the wild truffle has practically dried out. Prices of this product go from €300-€500/kg in origin, and they are sold at almost €2,000/kg to the end consumer in restaurants and specialized shops. Sarrion produced 67% of the world's total production this past year and is expected to continue being a dominant producer.
