The price of Alaska Pollock surimi, the raw material for Kamaboko and Chikuwa is increasing. Demand for fish paste products is increasing due to global health consciousness. Interest in the Sustainable Development Goals (SDGs) also sheds light on well-managed Alaska pollock. A new scale is emerging in fish-eating culture. As of mid-August, Alaska pollock surimi (high-grade product) was USD 5.30/kg (JPY 735/kg), up 20% YoY. In addition to the 20% YoY decrease in North American fishing quotas for resource management, the weaker yen, and increased global demand have also had an impact. More than 30% higher than in August 2020. In Europe, the United States, and China, where the economy was quick to normalize from the new coronavirus, "crab sticks'' and other health-conscious fish dishes have gained popularity. According to the Japan Kamaboko Association (Chiyoda, Tokyo), per household in Japan spent JPY 8,542 on fish paste products in 2021, up 2% from 2019.
