Among the main ingredients, the eggs are of crucial importance. The annual production of eggs in Italy amounts to 12.6 billions of eggs, approx. 775k/mt, with a self-sufficiency rate close to 100%. It is highly unlikely for Italians to import eggs from abroad as almost 80% of eggs found in the Italian market are free-range and organic. The value of the sector is also important, it reached USD 1.51 billion in 2021.
