Canadian cherries can be enjoyed from late June through until early September. Mainly grown in the Okanagan and Kootenay valleys of British Columbia, Canada, they have an adequate climate for cherries: long, deep winters, followed by summers when cherries can be grown on warm, dry days. These day and night variations in temperature extend the growing season of cherries, creating a large, plump, delicious fruit.
Around 80% of the world’s cherry varieties were bred and cultivated in the Canadian research center in B.C Okanagan Valley. The Okanagan Valley has established the world’s most advanced Cherry Fruit Research facilities. Canadian plant breeders have been working to produce cherries that combine the best traits of both sweet and sour cherries, which not only suit specifically to the colder climate of Canada but also have sweetness and bright colors that differ from conventional cherries. There is positive anticipation among Canadian cherry growers on a sizable crop of cherries compared to last year. They note that that this year’s crop could potentially double the size of last year’s amount.

Domain Knowledge of Cherry
Cherry is one of the cultivated species of the Prunus genus that produce small, fleshy, single-stoned fruits including plums and peaches. Historically, it is generally accepted that two species of cherries exist in world trade: P. avium (sweet cherry), which we eat fresh from the tree and farmers’ markets in the summer season, and P. cersus (sour cherry), which we find in a variety of processed forms.
- Sweet cherries: Large, plump, and deep-red varieties sold fresh in grocery stores. Two-thirds of sweet cherry production is sold for fresh consumption. Generally, they have a shiny supple exterior with deep purple/red color. (Main Types: Bing cherries, Skeena cherries, and Lapins cherries.)
- Sour cherries: The majority of the processed cherries we consume. Compared to sweet cherries, they are comparatively smaller and brighter in color and hold their shape and texture better in cooking. Their tartness mellows into a deep, sweet flavor making them a delicious choice for processed cherry products. (Main Types: Montmorency cherries, Morello cherries.)
