Frozen Octopus Vulgaris: We buy daily wild caught Octopus Vulgaris "Japan quality" catch of the day gutted at sea. Quality and grading selection are done at the reception in our factory by our certified classifier. The Octopus is then laid on a bed of ice flakes within an open led holding container, with upper body side down and lower body sides up; another layer of ice flakes is spread on it, and a second layer of Octopus is laid down as previously mentioned, etc... The premium "Japan quality" Octopus is kept 24 hours in the holding container with drainage holes at the bottom. This process makes the Octopus ready to be put in the beater to achieve a perfect cleaning and beating of the octopus that comes out of it in a perfect flower style.

The flower style Octopus is then controlled once again for quality and grading classification prior to entry into the freezing tunnel @ -40°C. The frozen IQF Flower Octopus is packed in a poly bag with a solid 20 kg standard carton box.
