Kappa carageenan extracted from red seaweed,Eucheuma Cotonii. They are widely used in food industries for gelling, thickening & stabilizing properties. Their main application is in dairy and meat products due to their strong binding to proteins.
It is recognized as plant-based hydrocolloid substitute to gelatin. It is especially used as texturizer and stabilizer in food. In microbiology , agar is used as growth medium.
