The cheese is wrapped in spring hay from the mountain pastures, which gives it the typical scents and aromas of nature, and in straw, which speeds up the maturing process. It has a straw-yellow colour, a strong aroma and a rich flavour. It has a hint of straw in the parts closest to the rind and its aroma is reminiscent of the typical scent of mown hay in June.
