The tomatoes first dried in the “maidda” (rectangular wooden container whose sides are inclined towards the base) under the Sicilian sun, are then transformed into a velvety cream rich in extra virgin olive oil that can be spread on croutons or bread, but which also lends itself to being used as an ingredient in various dishes.
