The foundation of the Amarelli company dates back to 1731, when it was first decided to extract juice from licorice roots, a plant that was already considered beneficial at the time. Since then, the Amarelli family has never stopped, keeping the taste of this unique product of the Italian confectionery tradition intact, overcoming centuries of challenges and transformations. All of the above was possible thanks to an innovative approach, common to all of the eleven generations that have managed the company so far.

After the roots have been harvested from neighbouring plots of land, the processing stages follow which, in a successful combination of craftsmanship and technology, transform the raw root stick into fragrant, black, shiny liquorice. The process of root selection, juice extraction, cooking and concentration takes place in sophisticated computerised departments, but the final touch still falls to the master liquorice-maker, who personally supervises the correct degree of solidification of the product. The dense, black, shiny, fragrant paste takes the desired shape from this moment onwards through a series of prototype machines that are the fruit of the company's hundreds years of experience.
