Vital wheat gluten is a natural protein obtained from wheat through a process of separation and drying. The product is a light, fine powder ranging in colour from creamy white to slightly yellowish, with a neutral odour and uniform structure.
Wheat gluten isolate is characterised by a high protein content (minimum 80% in dry matter), low ash and moisture content, and good water absorption capacity. The product is microbiologically stable and free from pathogens.
