The Kalleh Ghuchi Pistachio, known as the “Super round”, is a popular variety used widely in mixed nuts, sweets, confectionery, and ice cream making. Rounder and larger than the Akbari, it resembles a hazelnut but has a larger appearance and heavier weight. Renowned for its large kernel, it enjoys popularity in Greece, Germany, and Arab countries. Its name, translating to “Ovis’s head”, is derived from the large kernel size. The outer shell has a bone-like color leaning towards cream, while the kernel is dark red.
Smiling Pistachio: The Smiling Pistachio refers to those pistachios that have naturally opened, often called open-mouth pistachios. An important point is to distinguish between the Smiling Pistachio and the Water-Smiling Pistachio, which will be discussed later.
