The Kalleh Ghuchi Pistachio, known as the “Super round”, is a popular variety used widely in mixed nuts, sweets, confectionery, and ice cream making. Rounder and larger than the Akbari, it resembles a hazelnut but has a larger appearance and heavier weight. Renowned for its large kernel, it enjoys popularity in Greece, Germany, and Arab countries. Its name, translating to “Ovis’s head”, is derived from the large kernel size. The outer shell has a bone-like color leaning towards cream, while the kernel is dark red.

Smiling Pistachio: The Smiling Pistachio refers to those pistachios that have naturally opened, often called open-mouth pistachios. An important point is to distinguish between the Smiling Pistachio and the Water-Smiling Pistachio, which will be discussed later.

The Fandoghi Pistachio, or the “Round”, is named for its hazelnut-like appearance and is also recognized as “Ouhadi”. Playing a significant role in exports, it can be cultivated in many regions and makes up about 60% of the orchards in Rafsanjan. Despite its smaller size compared to other pistachios, it offers a great taste and a more affordable price, making it a popular choice in the market.
In-shell Pistachio: This term refers to closed pistachios that have not opened during the growth process. This type of pistachio is used to obtain pistachio kernels. Water-Smiling Pistachios also belong to this category, which become smiling when placed in water.

Water-Smiling Pistachio: This type of pistachio is obtained by placing In-shell Pistachios in water. One of the reasons why the price of Water-Smiling Pistachios is cheaper than regular Smiling Pistachios is the method of making them smile. Since these pistachios are artificially made to smile and are exposed to water, there is a possibility of exposure to various fungi, bacteria, and other microbes. This possibility reduces the quality of the pistachio kernel. The key difference between the Water-Smiling Pistachio and the regular pistachio lies in the size of the kernel. Thus, despite being cheaper, the method used to produce Water-Smiling Pistachios may impact their quality.
